This is super easy and refreshing salad that takes only minutes to make once you have the beans ready. I prepare my beans ahead of time and store batches of them in the freezer. I pull them out of the freezer when I’m ready to make this salad.
Serves: 4+ people as a side dish or salad.
Ingredients:
2 diced Persian Cucumbers
1 diced Roma Tomato
1 cup soaked/cooked Black Beans*
1 cup soaked/cooked Chickpeas (Garbanzo Beans)*
1/4 cup Olive Oil 1 TBS Apple Cider Vinegar
1 1/2 TBS finely chopped Mint
Sea Salt to taste (I use about ½ teaspoon)
Pepper to taste (I use about 3 pinches)
Optional: Feta Cheese
Directions:
Put Cucumber, Tomato, both Beans and Mint in medium bowl. Pour in Olive Oil and AC Vinegar. Mix together. Add salt, pepper as you prefer. If you like a bit more tang, add 1 or 2 tsp. of Lemon Juice. Feta cheese is best sprinkled on top if desired.
*In a pinch, they have organic ready to serve black beans and garbanzo beans at the store. Rinse them well before using them. You can read more in my post about How to Buy and Why Soak Legumes or Pulses.
