eggless caesar salad dressingThis is a great alternative to raw egg Caesar dressing, I was always worried about making the traditional dressing for the kiddo’s because of that reason. They loved Caesar salad, so after a bit of trial and error, this dressing is now a favorite! So please add and subtract and make your own family version too. ENJOY!!!!

Yield:  2 cups approx
Prep Time:  10-15 minutes
Cook Time:  none

Ingredients:

1/2 cup Plain un-sweetened kefir or yogurt
3/4 cup grated fresh Parmesan or Reggiano cheese
1 small clove of garlic
1 cup of Olive Oil (this varies sometimes you need a little more)
1 tsp (heaping) of Dijon mustard
2-3 fillets of anchovy
1 tsp of Worcestershire sauce*
1/3 tsp. fresh ground pepper and any other seasoning you like
1 Tb juice of fresh lemon (approximately)

Instructions:

Put all of the ingredients in a blender and blend for about 1 minute, taste and adjust to your taste (some hints are below). Sometimes we don’t adjust anything and sometimes there’s a few adjustments….that’s the science fun and art of cooking right!!!

Notes:

Ok, There are a few variables that you can easily adjust for:
– If it is a little runny I add another 1/3 cup of Olive Oil and a bit more grated cheese.
– Sometimes lemons vary in flavor – they can be extremely sour so I start with a smaller amount and slowly add more to get that extra kick at the end!!
– My children love the anchovy taste so I add a little of the Anchovy oil as well. If you don’t like the heavy anchovy taste then just a couple fillets.
Play around with this recipe its yummy!!

*A leading brand of Worcestershire sauce has high fructose corn syrup in it, but you can buy other brands that do not have HFCS at health food stores or at Amazon (some are vegan and some are gluten-free as well).
